Héritage 1893 Chablis Vieilles Vignes – Sylvain Mosnier – 2023 – 12.5%
Héritage 1893 Chablis Vieilles Vignes – Sylvain Mosnier – French white wine – 2023 – 12.5%
Environmentally certified HVE level 3
Héritage 1893 is Domaine Sylvain Mosnier’s limited-edition Chablis from old vines – named after the year the family began making wine. Unusually for Chablis, the entire wine is matured in oak barrels, giving it a rounder and more generous style.
The estate is located in Beines, just west of Chablis. The vines grow on the famous Kimmeridgian limestone with fossil oyster shells, and the vineyards have been HVE-certified since 2020.
A Chablis for the dinner table rather than the oyster bar – serve it slightly chilled and feel free to decant it briefly.

Taste: Elegant and rounded aroma with vanilla, liquorice, minerality, and notes of peach, flowers, pine, and bergamot. The flavour is soft with very subtle oak, salty tones, and seductive fruit, carried by Chablis’ flinty tension. A slender, refined finish.

Food pairing: Roast chicken, lobster, fish in cream sauce, and soft cheeses.
Storage: Ready to drink now and can be cellared for several years.
Serving: Best at 10–12 degrees
